On this course you will learn the fundamental techniques to make savoury and sweet dishes as well as oils, vinegars, and infusions and also explore ways to preserve and flavour food through curing and smoking.
Depending on what is in season, we will pick from the local hedgerows or meadows and then create fabulous tasting food from some of the following:
Rosehips, wild garlic, pineapple weed, meadow sweet, sorrel, bilberries, blackberries, nettles or dandelions.

Gourmet countryside cookery courses at Dale House Kitchen
Our cooking days will take place in our beautiful farmhouse situated in the Forest of Bowland AONB and very close to Gisburn Forest, Stocks reservoir and the Yorkshire dales.
Dominique has led a full career working in some of the premier kitchens in the UK. From the Roux brothers to the Houses of Parliament she has cooked for celebrities, royalty and prime ministers.
At Dale house, her seasonal and local philosophy is at the heart of her cooking and she now loves to share her passion in food by cooking for her guests and teaching small group or private classes.
