90g Egg whites
170g Caster sugar
Method
- Preheat the oven to 150c.
- Start whisking whites in an electric mixer.
- Add the sugar gradually a dessert spoon at a time. Whisk until the sugar has been dissolved.
- You can either pipe the meringues with a round nozzle to make nice even shapes or go for a more rustic approach and make more spikey pavlovas by dolloping the mix with a dessert spoon. Either way place your meringues into greaseproof paper.
- Place the tray in oven, turn down to 140c and bake for 1 hour.
