90g Egg whites
170g Caster sugar 


  1. Preheat the oven to 150c.
  2. Start whisking whites in an electric mixer.
  3. Add the sugar gradually a dessert spoon at a time. Whisk until the sugar has been dissolved.
  4. You can either pipe the meringues with a round nozzle to make nice even shapes or go for a more rustic approach and make more spikey pavlovas by dolloping the mix with a dessert spoon. Either way place your meringues into greaseproof paper.
  5. Place the tray in oven, turn down to 140c and bake for 1 hour.
