Preparing and cooking game birds – pigeon/pheasant
Slow cooking fantastic stews - venison
Moroccan style game pie
Hand raised pies
What do I do woth the legs? How to confit and make the most of the whole bird.
2 days butchery and cooking
Course only cost (including lunch both days) £250pp
2 night retreat cost
2 nights’ accommodation with breakfasts
3 course gourmet evening meals on Friday and Saturday
Working lunch on Saturday and Sunday
Optional guided wildlife walks on Saturday (early eve) and Sunday morning
