INGREDIENTS
Makes: approx. 2.5 kg
- 450 g rolled oats
- 120 g sunflower seeds
- 120 g pumpkin seeds
- 120 g white sesame seeds
- 3 cooking Medium apples
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 120 g golden syrup
- 100g honey
- 100 g soft light brown sugar
- 150 g flaked natural almonds
- 150 g blanched hazelnuts roughly chopped
- 1 teaspoon Maldon sea salt
- 100g sunflower oil
- 300 g raisins/sultanas/chopped dried apricots ( your choice)
METHOD
- Peel and core the apples and cut into 1cm dice. Place into a heat proof dish and cover. Bake until completely soft.
- Mix everything including the baked apple but excluding the dried fruit together very well in a large mixing bowl. Leave overnight preferably or else for a few hours.
- Spread this mixture out onto baking trays and bake at 160-170c, turning over about halfway through baking and re-distributing the granola evenly during the baking process. The object is to get it evenly golden and crisp when cool. This should take anything from about 20-30 minutes.
- Once it's baked, allow to cool and mix together with the raisins or whichever fruit you are using. Store in an airtight container.
- Serve with some yoghurt, milk and fresh or roasted fruits.
